So, i'm totally one of those people who moved to utah and fell completely in love with Cafe Rio's pork salads! So i thought about the day i move away from utah, and what would i do!!! I jumped online and tried to find a cafe rio recipe!! 
Cafe rio in our own home!! It didn't quite taste like the real thing, but you know, it was still really good!!!
Brad thoroughly enjoying my creation. He is still too much of a man to make it into a salad!
Linds at first enjoyed the salad... but then i'm not quite sure why she decided to drop it on the floor.

ummm - just look in your Elmer family cookbook (maybe Brad just doesn't have that sitting around, but he got one) and there are a few recipes from Dangela in there (cafe rio knock-offs).
